Easy, Low Carb, SUPER tasty chips! Just 2 ingredients.


You certainly wouldn’t guess that these tasty little chips were low carb because they’re SO satisfying! If you like crispy cheese, you’re going to love these. And, yes, they’re made with just 2 simple ingredients! In fact, you probably already have both of them on hand. This is my favorite low carb snack recipe because it actually has a crunch! I might even go as far to say that they’re better than potato chips. Maybe it’s because they don’t have all of the guilt. :)



INGREDIENTS:
4 egg whites
approximately 1/2 cup shredded cheddar cheese (or cheese of your choice)
seasoning to taste (optional)

INSTRUCTIONS:
Preheat oven to 400 degrees.
Grease a mini muffin pan REALLY well with vegetable or olive oil. You can also use Pam, but personally, I don’t think it works as well.
Separate 4 egg whites and seasoning of choice into a bowl and whisk well. I just add a pinch of garlic salt and black pepper, and sometimes rosemary!
Spoon about 1/2 tablespoon of your egg white mixture into each muffin compartment (just until you have a very thin layer covering the bottom). The muffin pan I use has 24 slots, and I find that 3-4 egg whites fills them perfectly. Keep in mind, the thinner you cover the bottom, the crispier your chips will be. If you make it too thick, your chips will only be crispy on the rim, but still really tasty!
Top each one with a pinch of shredded cheddar cheese. When I’m done, I use a small spatula to make sure none of the cheese is touching the edges for easier clean up. The cheese tends to stick to the sides a bit. The silicone muffin tins are much easier to clean… I’m ordering one pronto. ;)
Bake for 10-20 minutes or until the edges have browned. Your baking time will depend on how thick your egg mixture is.
Use a small spatula to remove the chips from the pan. Eat immediately and enjoy!

High Protein, low carb recipes/GARLIC PARMESAN CHICKEN/



One of my all time favorite aromas in a kitchen is the smell of sauteing garlic.

Pure.bliss. (Note if you do not love garlic, this recipe is not for you)

Seriously, if I run out of garlic, my kitchen closes down. I don’t know how to cook with out. (Okay, I’m a tad bit exaggerating but this Italian girl loves her garlic!)

This recipe is quick and simple….but it feels like you are eating out. It doesn’t take fancy skills or lots of expensive ingredients to make a great dish.




Garlic Parmesan Chicken is good enough to stand alone but is wonderful over pasta. Or, if you are gluten-free, like me, try it over zucchini noodles. This (Amazon link) tool to make ‘zoodles’ has been worth the investment. I use it several times a week.

INGREDIENTS
3 tbsp. butter
6 cloves minced garlic
2 chicken breasts-chopped into bite size pieces
sea salt
¼-1/2 cups parm cheese
2 cups spinach

INSTRUCTIONS
Saute garlic in butter for a minute or two
Add chicken pieces, salt, and cook until no longer pink in the middle.
Make sure to stir chicken to coat with butter and garlic
Add parm cheese and stir until the chicken is coated.
Add spinach and cook until wilted
Serve by itself or over pasta or zoodles

Most classic desserts contain carbs, often in the form of added sugar and white flour in cookies, cakes, and tarts. It can be difficult, but not impossible, to come up with creative and tasty no carb desserts. Cheese is naturally low carb; one ounce of cheese has less than half a gram of net carbs. Enjoy an ounce or two of nice cheese after dinner for a guilt-free dessert.

5. Low Carb Mousse

This mousse is similar to no carb cheesecake, but has no eggs and thus does not require baking.  Because of the cheeses used in this mousse, there are about four grams of net carbs, so it is not completely carb-free.

Net Carb Count: 4 grams
Ingredients:

½ Cup Ricotta or Cottage Cheese
Artificial Sweetener to Taste
Cinnamon to Taste
Nutmeg to Taste
Ginger to Taste
Directions:

Put ricotta or cottage cheese in a blender with some artificial sweetener to taste
Add your favorite combination of cinnamon, nutmeg, and ginger.
Blend until smooth and chill before serving.

It is hard to create a completely carb-free dessert, but the ideas above come quite close, most having less than one gram of net carbs per serving. Remember that dessert does not have to be sweet; cheese is a common finisher in many countries, and it’s a great choice for the low carb dieter. Get creative, too; you can make no carb cheesecake in a variety of ways, and you can flavor pudding and mousse with various spices and extracts without adding carbs.  Get in the kitchen and try your hand at one of these no carb desserts!
